Four seasons and five moments form the central idea behind Future & Wine, a restaurant on Wspólna Street in Warsaw where contemporary European cooking meets Polish ingredients, seasonality and a considered approach to wine.

The menu is not designed as a fixed formula. It changes through the year, following seasonal ingredients and allowing the character of the dishes to shift with them. At the same time, the restaurant's approach remains rooted in a few consistent ideas: letting the product lead, using modern techniques with purpose, and treating wine as part of the composition at the table.

Four Seasons, Five Moments

Future & Wine describes its concept as “4 Seasons, 5 Moments” — four seasons translated into five stages of a culinary experience.

Spring lends itself to lighter, fresher compositions, while summer brings the intensity of fresh vegetables and fruit. Autumn introduces mushrooms, pumpkin and deeper flavours, and winter allows for richer, more concentrated aromas.

The five moments take their most complete form in the restaurant's five-course tasting menu. Rather than functioning as five independent plates, the courses are intended to follow one another through changes in temperature, texture and intensity.

Depending on the season, the kitchen may work with ingredients such as octopus, lamb saddle, Hida A5 Wagyu and seasonal mushrooms, finishing with desserts built around ingredients such as dark chocolate.

The 4 Seasons / 5 Moments tasting menu is priced at PLN 430 (approximately €98) per person, or PLN 620 (approximately €141) with a wine selection. The tasting menu is available by advance reservation and prepayment.

The Product Comes First

Modern techniques have a place in the kitchen at Future & Wine, but the restaurant does not present technique as the attraction in itself.

Instead, they are used to emphasise the natural flavour of an ingredient, preserve its texture and create balance between the different elements on the plate.

The cooking draws broadly on European influences, while Polish products and culinary references remain part of its identity.

That does not necessarily mean reproducing traditional Polish dishes. Familiar ingredients and flavours can instead become starting points for contemporary interpretations — allowing a connection with local culinary traditions without requiring the finished dish to follow a traditional form.

Wine as Part of the Cuisine

Wine occupies a more deliberate role here than simply providing a bottle to accompany dinner.

Future & Wine approaches food and wine pairing through more than obvious similarities in flavour. Acidity, structure, intensity, temperature and the length of the finish can all affect how a wine interacts with a dish.

Acidity, for example, can introduce freshness and balance alongside richer or creamier preparations. A wine with greater structure can complement dishes with a stronger character, including meat or ingredients that have undergone longer cooking.

Aromatic relationships add another layer. A successful pairing does not always depend on finding similar flavours in the glass and on the plate. Contrast can be just as useful: freshness in a wine can cut through a more intense dish, while fruit, mineral or floral notes may bring forward aspects of the food that are less apparent when it is tasted alone.

The idea is therefore less about one element supporting the other and more about creating a dialogue between the two.

The wine list follows the changing character of the food, combining established European wine traditions with less obvious discoveries and giving the kitchen a broad range of styles to work with throughout the seasons.

Beyond the Tasting Menu

Alongside the tasting menu, Future & Wine offers a full à la carte selection, with dishes that can be ordered individually and paired with wines from the restaurant's list.

Guests can choose according to their own preferences, whether stopping by for a single dish and a glass of wine or staying for a full dinner.
